Grandma’s Zucchini Bread

YUMMM!

Ingredients

  • 3 Eggs
  • 1 cup Cooking Oil
  • 2 cup Sugar (1.5 is probably fine)
  • 2 tsp Vanilla
  • 3 cup Flour (I use whole wheat!)
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 2 cup Grated Raw Zucchini (squeeze out most moisture)

Steps

  1. Beat Eggs until foamy. Add oil, sugar and vanilla. Mix well.
  2. Sift together the flour, salt, cinnamon, baking soda and baking powder
  3. Add zucchini to egg mixture and blend well.
  4. Add flour mixture to wet ingredients. Mix well.
  5. (Optional) Fold 1/2 cup chopped walnuts into batter
  6. Pour into well-greased loaf pan(s). Makes 2 9x5x3
  7. Bake at 325 for 75 minutes. Can freeze after cools.
  8. *325 for 60 mins for mini loaves

 

The BEST Whole Wheat Pancakes

Super delicious! Great with added cinnamon and chopped up apple!

Ingredients

  • 2 cups white whole wheat flour
  • 2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp vanilla
  • 1 TBS honey
  • 2 TBS melted butter
  • 2 eggs
  • 1-3/4 cups milk

Instructions

  1. In a large bowl whisk together the flour, baking powder, baking soda, and salt until mixed well.
  2. In a small bowl, light beat the eggs, vanilla, honey, and melted butter.
  3. Add egg mixture to dry ingredients and stir.
  4. Add milk and mix well, but do not over-mix.

To cook pancakes:

  1. Preheat griddle to 325 degrees and melt enough butter to cover cooking surface.
  2. Spoon batter onto griddle and allow to cook for a few minutes until slightly bubbly on top and then flip. Cook for a few more minutes.
  3. Serve with butter and warm maple syrup.

Koh Tao’s Fruit Salad

YUM! So refreshing and loaded with nutrients :) Recipe from the Living Juices but on Koh Tao, Thailand!

Chop up all the fruit, then combine everything in a bowl:

  • Banana, sliced
  • Some watermelon
  • Pineapple
  • Papaya
  • Some apple
  • 1/4 cup muesli
  • Sliced almonds or any other nut
  • Pepita seeds and/or sunflower seeds
  • 1 Tbsp dried gogi berries
  • Raisins
  • ~1/4 cup coconut milk
  • Sprinkle of dried unsweetened coconut flakes

Of course you can add or subtract and fruit depending on what’s in season!

 

Pumpkin Chocolate Chip Bread or Muffins!

An all time Amanda favorite! Yummmmm! Moist, chocolatey, and perfect fit the holidays!

Ingredients:

  • 1 and 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (100g) packed light or dark brown sugar
  • 1 and 1/2 cups (340g) pumpkin puree (canned or fresh)
  • 1/2 cup (120ml) vegetable oil, canola oil, or melted coconut oil (GREAT w/ olive oil!!)
  • 1/4 cup milk
  • 2/3 cup (120g) semi-sweet chocolate chips

Directions:

  1. Adjust the oven rack to the lower third position and preheat the oven to 350F degrees. Lowering the oven rack prevents the top of your bread from browning too much too soon. Spray a 9×5 inch loaf pan with non-stick spray. Set aside.
  2. In a large bowl, whisk the flour, baking soda, cinnamon, nutmeg, cloves, and salt together until combined. In a medium bowl, whisk the eggs, granulated sugar, and brown sugar together until combined. Whisk in the pumpkin, oil, and milk. Pour these wet ingredients into the dry ingredients and gently mix together using a rubber spatula or a wooden spoon. There will be a few lumps. Do not overmix. Gently fold in the chocolate chips.
  3. Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. This may be before or after 50-65 minutes depending on your oven, so begin checking every 5 minutes at the 45 minute mark or so. (15-20ish mins for muffins!)
  4. Allow the bread to cool completely in the pan on a wire rack before removing and slicing. The bread will stay fresh in an airtight container (it tastes better on day 2!) at room temperature or in the refrigerator for up to 10 days. But it won’t last that long.
  5. Make ahead tip: Baked bread can be frozen up to 3 months. Thaw overnight in the refrigerator and bring to room temperature before serving.

Raggmunk (Swedish Potato Pancakes)

We made some delicious potato pancakes that tasted really similar to the ones we had at the Saluhall Market in Stockholm. We had them with Swedish meatballs we bought frozen from the local market :)

Basically, to make them you make simple pancake batter and you grate potatoes, then… wait for it… you mix them together and cook like regular pancakes.

First, the potatoes

Grate about 3/4 pounds of potato into a bowl of very cold water. Drain the potatoes and press out as much liquid as possible with paper towels.

Then, the batter

Whisk together 1/2 cup flour, 1/4 teaspoon baking powder, 1/2 cup almond milk, and salt & pepper until smooth. Add 1 tablespoon grated onions and 1 egg and continue to whisk.

Combine

Stir the potatoes into the batter.

Cook!

Get a griddle or pan pretty hot, add some oil and then cook like you would pancakes. Flip once when the bottom is golden brown – they will take longer than just pancakes do.

Homemade Clif Bars!

INGREDIENTS:

  • 1 cup dates (pitted)
  • 1¼ cups crisp rice cereal
  • 1 cup quick-cooking oats
  • ¼ cup coarsely chopped peanuts
  • 2 tablespoons ground flaxseed
  • ½ teaspoon ground cinnamon
  • Pinch salt
  • ½ cup peanut butter
  • 1/3 cup brown rice syrup
  • 1 teaspoon vanilla extract
  • ¼ cup mini semisweet chocolate chips

DIRECTIONS:

1. Spray an 8×8-inch pan with non-stick cooking spray; set aside.

2. Place the dates in a food processor and pulse until finely chopped. Combine the pureed dates with the cereal, oats, peanuts, flaxseed, cinnamon and salt in a large bowl.

3. Combine the peanut butter and brown rice syrup in a small saucepan over medium heat, stirring until melted and completely blended. Remove from heat and stir in the vanilla extract.

4. Pour the peanut butter mixture over the oat mixture and stir until well combined. Gently stir in the chocolate chips. Turn the mixture into the prepared pan and press firmly to pack the mixture into the pan. Let the mixture sit until completely cool and set, at least 1 hour. Cut into bars, then wrap individually in plastic wrap and store in the refrigerator.

Whole Wheat Waffles!

These are SO delicious! Extra delicious: add breakfast sausage that has soaked in maple syrup into each waffle :)
SERVES: 4 – 5
INGREDIENTS
  • 2 large eggs
  • 1 ¾ cups milk (I have used everything from skim milk to thick buttermilk…so whatever you have on hand should work)
  • ¼ cup oil (I used melted butter)
  • 1 tablespoon honey
  • ½ teaspoon ground cinnamon (We prefer fresh)
  • ¼ teaspoon baking soda
  • 1 ½ cups whole-wheat flour (I used King Arthur’s organic white whole-wheat flour)
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • Warmed 100% pure maple syrup for serving
  • Fresh fruit for serving
INSTRUCTIONS
  1. Preheat your waffle iron.
  2. In a large mixing bowl whisk together the eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
  3. Add in the flour, baking powder, and salt and whisk together just until the large lumps disappear.
  4. When the waffle iron is hot, dab it with a little butter and then ladle some batter onto the center of the iron. Follow the instructions that came with your waffle maker to know how long it should be cooked (mine takes about 3 – 4 minutes each).
  5. Keep waffles warm until you finish cooking all of them. Top with pure maple syrup and fruit. Enjoy!

AMAZING Honey Whole Wheat Banana Bread!

Delicious, good-for-you, and easy to make!
INGREDIENTS
  • 1 1/2 cups whole wheat pastry flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 heaping cup mashed ripe banana (about 2-3 bananas)
  • 2 Tbsp honey
  • 3 tsp Brown Sugar
  • 1/3 cup nonfat vanilla greek yogurt
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons vanilla
  • 2 1/2 tablespoons unsweetened vanilla almond milk
  • 1 egg
  • 1 egg white

INSTRUCTIONS

  1. Preheat oven to 325 degrees F. Grease a 8×4 or 9×5 loaf pan with cooking spray.
  2. In a large bowl, whisk together flour, baking powder,baking soda, and salt; set aside.
  3. In a large mixing bowl, combine mashed banana, honey, brown sugar, greek yogurt, olive oil, almond milk and vanilla and beat on low until smooth in consistency. Add in the egg and egg white and beat again until well combined, about 1 minute. Add the banana mixture to the flour mixture and combine until moist — It’s important to not over mix!
  4. Spoon all of the batter into the greased loaf pan. Bake at 325 degrees for 45-60 minutes or until a tester inserted into middle of the bread comes out clean. The length of time will vary based on which loaf pan you use, so I suggest checking the bread at 45 minutes. Also, don’t fear the golden crust! The bread may look done on the outside, but the inside is what’s important — you don’t want a gooey bread.
  5. Once a tester inserted into the bread comes out clean, cool for 10 minutes in pan on wire rack, then remove from pan gently and cool completely on wire rack. Cut into 12 slices and enjoy!
NOTES
If you’d like to freeze your bread, simply wait until bread is completely cool, then slice and individually wrap in cling wrap and place in the freezer. Once ready to eat, just toast or microwave your slice and spread with your favorite topping.
It can be made with chocolate chips too!
